docs: use OPENCODE_CONFIG_DIR in install docs

Browse Source 
Set the variable once at the top of each shell block with a default
fallback, then use it cleanly throughout. Supports custom config
directories without repeating the alternation on every line.

Based on cavanaug's work in PR #704.
