Closes HH-701

  • document Docker secret, sensitive data volume, lifecycle, rollback, ports, ExternalUI, restart recovery, and troubleshooting contracts
  • record ./tests/container-smoke.sh as the single sanitized local acceptance command
  • fix the existing make logs target to follow the mihomo service

Verified with ./scripts/test.sh, ./tests/container-smoke.sh, go vet ./..., go mod verify, git diff --check, and make -n logs.
